La semana pasada escuchábamos en Barcelona las palabras de Vincent Grégoire, director creativo de la agencia de tendencias Nelly Rodi. Se definía a sí mismo como “un cazador de tendencias”. Lleva 26 años pronosticando tendencias y es una autorizada para predecir el futuro. Y dejó claro que una de las tendencias para los próximos años sería la vida nómada. El espíritu viajero, la curiosidad y la velocidad son características que se ajustan a este estilo de vida.
Puso el ejemplo de la alta cocina, con cada vez más presencia de los «Nomad Chefs», aquellos que se llevan su arte internacionalmente de cocina en cocina sin anclarse. Prefieren moverse por el mundo antes que abrir sus propios restaurantes. Así cambian de equipo, cambian de carta. Experimentan.
